Four Ingredient Banana Chocolate Chip Muffins

As you know, I love making quick breads from scratch, but I have been experimenting with some new three ingredient recipes, and have been very pleased so far!  These quick, simple recipes are my new go-to when I want to whip up something last minute to bring to work or a family gathering and don’t have time to make something from scratch.

Since I still have SO many bananas left, I decided to surprise my hubby with some yummy Banana Chocolate Chip muffins.  I used our banana muffin recipe and added some mini chocolate chips  to help ensure a nice chocolaty surprise in every bite (assuming you can restrain yourself from eating the entire muffin in one bite!  😆 )

 1 cup (3-4) ripe bananas
 2 eggs
 1 box french vanilla cake mix

Preheat oven to 350* Fahrenheit.

Mash bananas.

Add cake mix.

Add eggs. Gently drop eggs on top of batter and beat with fork before incorporating into the batter.

Mix gently to combine all ingredients. **Add desired add-ins during this step.

Bake for 16-18 minutes, or until a toothpick inserted into the center comes out clean.

Tips

You want your bananas to be fairly ripe.  I like them once they start to get brown spots on the peel and become slightly mushy.

Ripe bananas are easily mashed with a fork or potato masher.

You can use add-ins to customize your muffins. Favorite choices include walnuts, chocolate chips and blueberries.  You can get creative and have fun with your flavor combinations!

Coat the add-ins with a small amount of the dry cake mix to help prevent them from sinking to the bottom.
