Banana Nut Bread

There is something about the smell of banana bread in the oven that reminds me of childhood;  it is my go-to baking whenever I’m stressed or on the hunt for comfort food.  In the aftermath of Hurricane Irma, I could definitely use some comfort food and as always we had some bananas sitting on the counter that were looking for a purpose!

This recipe is simple to make (I love quick breads!).  It is so moist and is jam-packed with banana. I added a half cup of chopped walnuts to kick this recipe up a notch, but it would be equally delicious plain or with chocolate chips for a sweet treat.

 2 cups flour
 1 tsp baking soda
 ¼ tsp salt
 1 egg
 1 ¼ cups sugar
 ½ cup vegetable oil
 2 tbsp buttermilk or milk
 ½ tsp vanilla
 3 bananas, mashed very well
 ½ cup optional mix-in and toppings

Preheat oven to 325 degrees.

Add flour, baking soda and salt to a small bowl and set aside.

Mix egg, sugar, oil, milk and vanilla and stir until well combined

Add the dry ingredients to the wet and stir well. The mixture will be thick and dry.

Next add bananas and stir until incorporated.

Add in optional mix-ins and pour into a loaf pan. *Reserve a small amount to sprinkle on top.

Cook 50-75 minutes, checking regularly until a knife comes out clean.

Tips

The success of banana bread depends on the bananas.  For the best flavor, you really want super ripe or slightly brown bananas.

If your bananas are fresh you can place them in a brown paper bag closed tightly for a day or two to help them brown, keep them attached at the stem for faster ripening or if you need them brown right away, place them in a 300 degree oven for 30 minutes and then let cool for 30 minutes.  Be sure to place parchment under the bananas before placing them in the oven as they may leak a bit.

You can replace milk with unsweetened vanilla almond milk and eliminate the vanilla extract.
