Four Ingredient Blueberry Banana Muffins

I have been obsessed with all things banana lately.¬† It probably has something to do with the fact that we ended up with dozens of bananas after a recent visit to my in-laws ūüėČ .¬† After trying out some simple 3-4 ingredient muffins with various levels of chocolate, I was looking for something a little lighter.¬† Blueberry Banana Muffins seemed like the perfect light, summery treat!

I like to justify eating a couple blueberry banana muffins in one sitting since blueberries are a superfood and have so many health benefits!  Blueberries are antioxidant-rich and nutrient dense.  They can help lower blood pressure, maintain brain function and have anti-diabetic effects.

I’m sure all of these benefits outweigh the fact that I’m eating a muffin, right?!?!?!¬†¬†:mrgreen:

Adding Martha Stewart’s cinnamon crumb topping makes these muffins pure heaven!

I use a pint of fresh blueberries to amp up the blueberry flavor.¬† You can easily substitute 16 oz frozen whole blueberries when you’re craving sweet blueberry banana muffins year round.

 1 cup (3-4) ripe bananas
 2 eggs
 1 box french vanilla cake mix

Preheat oven to 350* Fahrenheit.

Mash bananas.

Add cake mix.

Add eggs. Gently drop eggs on top of batter and beat with fork before incorporating into the batter.

Mix gently to combine all ingredients. **Add desired add-ins during this step.

Bake for 16-18 minutes, or until a toothpick inserted into the center comes out clean.

Tips

You want your bananas to be fairly ripe.  I like them once they start to get brown spots on the peel and become slightly mushy.

Ripe bananas are easily mashed with a fork or potato masher.

You can use add-ins to customize your muffins. Favorite choices include walnuts, chocolate chips and blueberries.  You can get creative and have fun with your flavor combinations!

Coat the add-ins with a small amount of the dry cake mix to help prevent them from sinking to the bottom.
