Chocolate Peanut Butter Banana Bread

I love to bake banana bread, and always seem to have overly ripe bananas laying around.  I have always preferred my banana bread with nuts in it, but the hubby has some strange aversion to nuts in any dessert.  I try to be creative and come up with alternative desserts that we can both enjoy.

I can confidently say that this recipe was a success!

The addition of chocolate and peanut butter chips takes this from a sweet comfort food to a decadent dessert.

I brought some to work with me to work and my coworkers happily sampled my treats!  I was quickly told that my chocolate peanut butter banana bread needed to be my thing, and that I needed to make this for every function we have going forward.  Needless to say, I think they were fans!

 2 cups flour
 1 tsp baking soda
 ¼ tsp salt
 1 egg
 1 ¼ cups sugar
 ½ cup vegetable oil
 2 tbsp buttermilk or milk
 ½ tsp vanilla
 3 bananas, mashed very well
 ½ cup optional mix-in and toppings

Preheat oven to 325 degrees.

Add flour, baking soda and salt to a small bowl and set aside.

Mix egg, sugar, oil, milk and vanilla and stir until well combined

Add the dry ingredients to the wet and stir well. The mixture will be thick and dry.

Next add bananas and stir until incorporated.

Add in optional mix-ins and pour into a loaf pan. *Reserve a small amount to sprinkle on top.

Cook 50-75 minutes, checking regularly until a knife comes out clean.

Tips

The success of banana bread depends on the bananas.  For the best flavor, you really want super ripe or slightly brown bananas.

If your bananas are fresh you can place them in a brown paper bag closed tightly for a day or two to help them brown, keep them attached at the stem for faster ripening or if you need them brown right away, place them in a 300 degree oven for 30 minutes and then let cool for 30 minutes.  Be sure to place parchment under the bananas before placing them in the oven as they may leak a bit.

You can replace milk with unsweetened vanilla almond milk and eliminate the vanilla extract.
