Cranberry Brie Bites

We are hosting our first Thanksgiving (and our first big family event) this year, and while I am super excited to have all the family together, the pressure is on to have all of the finishing touches done in the house, especially since we are still dealing with Hurricane Irma clean-up.

We have been working feverishly to finish our stairs and upstairs landing, which were still carpet until a few weeks ago 😯 … Thankfully our family is amazing and has been working non-stop on all of our (not so) little projects to ensure everything is completed in time!

Our family is handling most of the food prep, since we have a pretty small kitchen (and I don’t think they fully trust us to be responsible for the full meal), so we are handing all of the little decorating touches, some of the desserts, and the appetizers.  I love to be creative with my baking, and having been hunting for some delicious new recipes to try this year.  We love baked brie, but sometimes it can be a bit messy and difficult to eat when there are a lot of people, but I knew I wanted to include a creamy baked brie into our menu in some way…

Cranberry brie bites were the perfect solution!  There is something about the buttery cheese paired with the tart cranberry chutney that is absolutely to DIE for!

One of my taste testers summed it up best – “These taste like Thanksgiving in a bite!

I will take that as a stamp of approval 😆

These cranberry brie bites taste like Thanksgiving in one bite!

 8 oz Brie wheel
 1 roll crescent dough
 1 cup cranberry chutney or sauce
 ½ cup chopped pecans

Preheat over to 375* and grease mini muffin tin with cooking spray.

On a lightly floured surface, roll out crescent dough and pinch seams together. Cut into 24 squares and place into muffin tin.

Cut brie into small pieces and place inside crescent dough.

Top with a spoonful of cranberry chutney and chopped pecans.

Bake until the crescent dough golden, 12-15 minutes.
