Jalapeño Popper Mushrooms

Jalapeño Popper mushrooms are loaded with flavor!  This Stuffed Mushroom recipe could not be any easier, and is simply delicious.  You’ll need just a few ingredients and about 5 minutes of prep to get these babies in the oven!

I love throwing these together before a party – they can be prepped ahead of time and stored in the fridge until you’re ready to bake.

Jalapeño Popper mushrooms are also great to whip up for a quick snack during family game night.  Even my mushroom hating husband can’t get enough!

Jalapeño Popper Mushrooms are always a party hit! Seriously delicious! Great for parties, get-togethers or as a low-carb snack.

 24 whole white button mushrooms
 5 tsp garlic, minced (approximately 2 cloves)
 1 (4-oz) can diced green chilis or jalapeños, drained
 1 (8-oz) package cream cheese, softened
 1 cup shredded cheddar cheese
 ½ lb bacon, cooked and chopped

Preheat oven to 350ºF. Place a baking rack on a foil lined rimmed baking sheet. Set aside.

Remove stems from mushrooms.

Combine cream cheese, garlic, jalapeños, cheese and cooked bacon.

Spoon cream cheese mixture into mushroom caps. Place on baking rack.

Bake for 15 to 20 minutes.

Tips:

Mushrooms can get quite juicy when baking; placing the stuffed mushrooms on a baking rack prior to putting them in the oven will help keep them above the liquid.

When you want a change, consider fixing the filling on its own—instead of stuffing mushrooms. It's a good spread on baguette slices or crackers.
